Weird Behavior of Date Picker after REST Call

I have a scenario where a page is loaded initially with some values using a SPA in which I call a server-side REST service. Once the REST service has processed the data I would like to update some of the form’s values. In order to do that I have created a function in which I am changing values in the form with javascript, then calling the serverside again to process. If I wait long enough (say 15 mins) for the server to completely return the first time and then use a picker (date picker) to update the form again, then the value of the picker is updated with the date from the last time.
I’m not really sure what could be causing this, can anyone shed any light?
Edit: Here’s an example of a specific date field. The function uses the javascript to change the value of the field, then the date picker is shown. If the value is changed by the picker the value in the field changes, if not then it doesn’t.
